Pickup, Trays, or Catering: Which Gee's BBQ Order Fits Your Event?
March 18, 2026 · Gee's BBQ Team
Not sure whether to order BBQ pickup, trays, or full event catering from Gee's BBQ? A simple guide for Santa Ana and Orange County gatherings.
One of the most common questions we get: "Should I just order pickup, do trays, or ask about catering?"
All three come from the same pit — 14-hour brisket, dino ribs, lamb barbacoa, scratch sides — but they fit different situations. Here is a straightforward guide so you pick the right path the first time.
Menu pickup — same-day and small orders
Best for: dinner for one to four people, trying Gee's for the first time, grabbing barbecue on the way home.
- Order from our online menu when pickup ordering is open
- Choose individual plates, proteins, and sides
- No lead time beyond checking availability
If you want brisket and tangy slaw tonight, this is your move.
Tray orders — groups without a full quote
Best for: office lunches, family reunions, graduation parties, church events, backyard gatherings up to roughly thirty guests.
- Build your tray order online
- Requires at least one week's notice on your pickup date
- Pick proteins (brisket, dino ribs, barbacoa, sausage) and scratch sides
- Pick up at your chosen location and time — hourly slots from 12 PM to 8 PM
Trays are the sweet spot when you want real barbecue for a group without a formal catering contract.
Event catering — larger or custom events
Best for: weddings, corporate events, parties over roughly thirty guests, or any event needing a custom quote or service coordination.
- Submit an event catering inquiry
- Minimum guest count: 10
- Requires at least one week's notice on your event date
- We follow up within one business day
Choose catering when logistics, guest count, or service style goes beyond a pickup tray.
Quick comparison
- Pickup — fastest, smallest, order today
- Trays — one week ahead, feed a group, you serve
- Catering — one week ahead minimum, custom quote, full events
Still not sure?
Start with pickup if you have never tried us. Move to trays when you are feeding a team or family table. Reach out for catering when the guest list outgrows a few trays.
Every path ends at the same smoke — post oak, patience, and sides made from scratch.
However you order, we cook it the same way: slow, honest, and worth sharing.
